Quality Assurance Programs and FSMA Preventive Controls for Human Food Rule Requirements Training Series

These recorded training modules are targeted to small processors to aid in FSMA implementation by highlighting the overlaps between regulatory requirements and what processors are already doing as part of their Quality Assurance program.  The series is made possible by a grant from the USDA Food Safety Outreach Program.

Module 1: Quality Assurance and Quality Control

Learn the overlaps between quality assurance programs and the FSMA Preventive Controls for Human Food Rule.  Tools used in implementation of quality assurance and quality controls programs are also introduced.  Content developed and narrated by Dr. Luxin Wang.

Module 2: Microbiological Testing of Foods

Understand the different microbial targets for testing and basics for setting up microbial sampling plans.  Content developed and narrated by Dr. Erin DiCaprio.

Module 3: Pathogen Environmental Monitoring Programs

Learn about different types of environmental monitoring programs and key considerations for establishing a pathogen environmental monitoring program.  Content developed and narrated by Dr. Linda J. Harris.
